for about 6 months now, i've been striving to eat more healthy. this is due to the fact that i would always get HORRIBLE HORRIBLE migraines. but ever since then, i've been headache-free. PRAISE GOD!
so what exactly do i do or have been doing?
i've been lessening my normal intake of food and increasing my intake of veggies and fruits. in addition to that, i also drink lemon water first thing in my day. that is, one whole lemon squeezed in a glass of water. MSG was a large contribution to my headaches. so i also cut that off my diet.
at my boarding school, we were fortunate enough to have a salad bar. so i would have a salad every day as well. that was a huge adjustment to my usual diet, because i HATED salads. now, i love them. and for those that are wondering, i DO NOT have dressing with my salad. simply because i dislike the taste of my salads with dressing. i feel it is less healthy and it takes away the true flavors of a salad.
fun fact: most salad dressings have A LOT of MSG.
from today, i wanted to share my lunch. it's been the best lunch i've had in a long time and i can already tell my body feels very thankful for a delicious, healthy meal.

finding some kale and spinach in the fridge, i thought i would have a simple salad.
after squeezing myself a lemon in the mason jar i've been drinking out of, i prepped my veggie meat.
i AM vegetarian, so i enjoy a good veggie chick often. i chose to bake them this morning instead of frying them, for a healthier route.
whilst they were baking, i sliced up the kale in small bite-sized pieces, and joined in a handful of spinach. next i cut up some tomatoes in thin slices and sprinkled them with cracked black pepper (may favorite).
Once the veggie meat are nicely crisp, I just join them on top of the greens. And little pinch of some lemon go great with the fresh veggies.
It's delicious!
